Bouncy udon noodles tossed with tender beef, bok choy, and a glossy soy-based sauce — simple, comforting, and satisfying.

Ingredients

Protein

  • 1 packet thinly sliced beef

Noodles

  • 2 packets udon noodles

Vegetables & Aromatics

  • ¼ onion, sliced
  • 1 bunch bok choy
  • 2 slices ginger, chopped

Sauce & Seasoning

  • ½  tbsp dark soy sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp sugar
  • 1 tsp yumyum

Cooking Fat

  • 1 tbsp sesame oil

Instructions

  1. Start the Base
  1. Heat a wok over medium-high heat and add oil.
  2. Add sliced onion and stir-fry until softened and fragrant.
  1. Noodles In
  1. Add udon noodles to the wok.
  2. Toss gently with the onion until loosened and evenly mixed.
  1. Season
  1. Add dark soy sauce, soy sauce, and oyster sauce.
  2. Toss well so the noodles are evenly coated and glossy.
  1. Add the Beef
  1. Add thinly sliced beef to the wok.
  2. Toss briefly until the beef is just cooked through.
  1. Greens & Finish
  1. Add bok choy and ginger.
  2. Toss until the greens wilt slightly.
  3. Add sesame oil, sugar, and yumyum.
  4. Give everything a final mix to combine.
  1. Serve
  1. Remove from heat.
  2. Serve immediately while hot and bouncy.
