Whip up this Easy Chicken Noodle Stir Fry—juicy chicken, crisp veggies, and saucy noodles in every irresistible bite!

Ingredients

  • 1 boneless chicken thigh (about 120g), thinly sliced, velveted with this recipe
  • 150g Hokkien noodles, loosened in warm water and drained
  • 3–4 stalks choy sum, chopped into 2-inch pieces
  • 1 tsp dark soy sauce
  • 1 tbsp oyster sauce
  • ¼ tsp YumYum , you can buy it here or use MSG
  • 1 tbsp neutral oil (plus more if needed for noodles)

Instructions

  1. Heat 1 tbsp of oil in a wok over medium-high heat. Add the sliced chicken thigh and stir-fry for 2–3 minutes until golden and cooked through. Push to the side.
  2. Add a touch more oil if needed. Toss in the loosened noodles and stir-fry until slightly warmed through.
  3. Add the dark soy sauce, oyster sauce, and YumYum. Mix well to coat the noodles evenly.
  4. Add the choy sum and toss everything together in the wok over high heat for another 30–60 seconds until everything’s hot and glossy and they choy sum has wilted
  5. Serve immediately.
