- 1 boneless chicken thigh (about 120g), thinly sliced, velveted with this recipe
- 150g Hokkien noodles, loosened in warm water and drained
- 3–4 stalks choy sum, chopped into 2-inch pieces
- 1 tsp dark soy sauce
- 1 tbsp oyster sauce
- ¼ tsp YumYum , you can buy it here or use MSG
- 1 tbsp neutral oil (plus more if needed for noodles)
Instructions
- Heat 1 tbsp of oil in a wok over medium-high heat. Add the sliced chicken thigh and stir-fry for 2–3 minutes until golden and cooked through. Push to the side.
- Add a touch more oil if needed. Toss in the loosened noodles and stir-fry until slightly warmed through.
- Add the dark soy sauce, oyster sauce, and YumYum. Mix well to coat the noodles evenly.
- Add the choy sum and toss everything together in the wok over high heat for another 30–60 seconds until everything’s hot and glossy and they choy sum has wilted
- Serve immediately.
