Ingredients

For the Chicken:

  • 2 boneless chicken thighs, pounded slightly for even thickness
  • 1 tsp light soy sauce
  • ½ tsp white pepper
  • ½ tsp salt

For the Batter:

  • 1 cup self-raising flour
  • ½ cup cornstarch
  • 1 cup + 2 tbsp water

For Frying:

  • 2 cups vegetable oil

For the Gravy:

  • 1 tbsp oil
  • ½ tbsp soy sauce
  • 1 tsp chicken powder
  • ½ tsp white pepper
  • ½ cup water
  • ½ tbsp potato starch mixed with 2 tbsp water (to thicken)

For the Sides:

  • 2 cups frozen crinkle-cut fries (store-bought)
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)

Instructions

  1. In a bowl, season the chicken thighs with light soy sauce, white pepper, and salt. Let marinate for 10 minutes.
  2. In a separate bowl, mix self-raising flour and cornstarch, then gradually whisk in water until smooth.
  3. Heat oil in a wok or deep pan over medium-high heat (about 180°C/350°F).
  4. Dip the marinated chicken into the batter, ensuring full coverage.
  5. Carefully place the chicken into the hot oil and deep-fry for 6-7 minutes until golden brown and crispy. Drain on a wire rack.
  6. In a separate pan, heat 1 tbsp oil and add soy sauce, chicken powder, white pepper, and water. Stir well and bring to a simmer.
  7. Mix potato starch with 2 tbsp water until smooth, then slowly pour into the gravy while stirring continuously. Cook until the gravy thickens. Remove from heat.
  8. In another pot, bring water to a boil and cook the frozen mixed vegetables for 2-3 minutes. Drain and set aside.
  9. Fry the crinkle-cut fries in hot oil according to package instructions until crispy and golden.
  10. Place the fried chicken on a plate, pour the gravy over the top, and serve with crinkle-cut fries and boiled mixed vegetables on the side.
