Ingredients
Scale
Chicken
- 2 skinless chicken thighs (approx. 500 g / 1.1 lb), cut into cubes
- 1 tsp chicken powder
- 1 tbsp sesame oil
- 1 tbsp meat velvet
- 1 tsp yumyum seasoning
- 1 tbsp custard powder
- 1 tbsp Chinese cooking wine
Batter
- â…” cup self-raising flour
- â…“ cup corn flour
- ¾ cup water
Noodles
- 1 packet chow mein noodles
- 3 garlic cloves, finely diced
- 1 tbsp brown bean paste
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tbsp dark soy sauce
- ½ white onion, cut into wedges
- 2 tbsp water
Honey Sauce
- ¼ cup honey
- 1 tbsp custard powder
- ¼ cup water (60 ml / 2 oz)
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp potato starch slurry (1 tbsp potato starch mixed with 1 tbsp water)
Garnish
- 1 tsp sesame seeds (optional)
Instructions
Prepare the Chicken
- Add the chicken, chicken powder, sesame oil, meat velvet, yumyum seasoning, custard powder, and Chinese cooking wine to a bowl.
- Mix well until evenly coated.
- In a separate bowl, combine the self-raising flour, corn flour, and water to form a batter.
- Add the chicken to the batter and mix until coated.
Fry the Chicken
- Heat oil in a wok over high heat.
- Add the chicken piece by piece and fry until golden brown and cooked through.
- Remove from the oil, drain well, and set aside.
Cook the Noodles
- Add a little oil to a wok over high heat.
- Add the garlic and stir until fragrant.
- Add the chow mein noodles and toss.
- Add the brown bean paste, soy sauce, oyster sauce, and dark soy sauce.
- Toss until the noodles are evenly coated.
- Add the onion and continue tossing.
- Add a splash of water if needed to loosen the noodles.
- Transfer to a serving plate and set aside.
Make the Honey Sauce
- In a bowl, combine the honey, custard powder, water, salt, and sugar.
- Add a little oil to a clean wok and pour in the honey mixture.
- Bring to a gentle simmer.
- Add the potato starch slurry and stir until the sauce thickens.
- Add the fried chicken and toss until evenly coated.
Serve
- Place the chow mein noodles onto a serving plate.
- Spoon the honey chicken over the top.
- Finish with sesame seeds and serve immediately.
