Chicken

  • 2 lbs chicken thigh, boneless and skinless, cut into 1-inch cubes
  • 2 tbsp cornstarch
  • 1 tbsp yum yum
  • 1 tbsp soy scallion powder

Aromatics & Sauce

  • 2 slices ginger, chopped
  • 5 garlic cloves, chopped
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tsp sugar

To Finish

  • Green spring onions, to garnish

Instructions

  1. Prep the Chicken

  1. Add the chicken thigh pieces to a bowl.
  2. Coat evenly with cornstarch, making sure each piece is lightly dusted.
  3. Set aside while you heat the wok.
  1. Slow Sear for Fragrance

  1. Place a wok over low heat and add a small amount of oil.
  2. Add the chicken in a single layer.
  3. Season with yum yum and soy scallion powder.
  4. Let the chicken cook slowly, allowing the seasoning to bloom and the chicken to turn fragrant without rushing.
  1. Build Flavour

  1. Once the chicken has developed colour, gently turn the pieces or give them a light stir so they colour evenly.
  2. Sprinkle over a little more soy scallion powder.
  3. Add chopped ginger and garlic, oyster sauce, soy sauce, and sugar.
  4. Stir gently to evenly coat the chicken and aromatics.
  1. Caramelise

  1. Let the chicken cook undisturbed briefly so the sauce can bubble.
  2. Stir occasionally, allowing the sauce to thicken and caramelise around the chicken until glossy and rich.
  1. Finish & Serve

  1. Add chopped green spring onions. 
  2. Remove from heat.
  3. Plate immediately while hot and fragrant.
