Thai Red Curry Wontons

Wonton Filling

  • 2 lbs chicken mince
  • 1 lb shrimp, chopped
  • 1 tbsp chicken powder
  • 1 tbsp yumyum
  • 1 tsp white pepper
  • 2 slices ginger, chopped
  • 1 green spring onion, cut finely
  • 1 tbsp sesame oil
  • 1 tbsp Chinese cooking wine
  • 4 tbsp water
  • 4 tbsp cornstarch
  • 1 packet wonton wrappers

Thai Red Curry Sauce

  • 3 kaffir lime leaves
  • 2 lemongrass, chopped
  • 1 tbsp red curry paste
  • 1 tbsp chicken powder
  • 1 tbsp fish sauce
  • 2 tbsp sugar
  • ½  cup coconut milk
  • 1 tbsp chilli oil

Instructions

  1. Mix the Filling
  1. Add chicken mince and chopped shrimp to a large bowl.
  2. Add chicken powder, yumyum, white pepper, ginger, spring onion, sesame oil, Chinese cooking wine, water, and cornstarch.
  3. Mix thoroughly until the filling becomes sticky and well combined — this helps keep the wontons juicy and hold their shape.
  4. Set aside while you prepare to wrap.
  1. Wrap the Wontons
  1. Lay out wonton wrappers on a clean surface.
  2. Place a small spoonful of filling into the centre of each wrapper.
  3. Lightly moisten the edges with water, then fold and seal tightly, pressing out any air to prevent bursting during cooking.
  4. Keep wrapped wontons covered while you finish the batch.
  1. Make the Thai Red Curry Sauce
  1. Heat a wok over medium heat and add kaffir lime leaves and lemongrass with a small splash of oil.
  2. Stir briefly until fragrant.
  3. Add red curry paste, chicken powder, fish sauce, sugar, and coconut milk.
  4. Stir until smooth, then bring to a gentle simmer.
  5. Remove from heat once hot and aromatic. Stir through chilli oil at the end.
  1. Cook the Wontons
  1. Bring a pot of water to a rapid boil and add a small amount of oil.
  2. Drop wontons in gently, working in batches if needed.
  3. Cook for 1½–2 minutes, or until wontons float and are just cooked through.
  4. Remove and drain well.
  1. Finish & Serve
  1. Arrange cooked wontons into serving bowls or plates.
  2. Spoon or pour the hot Thai red curry sauce generously over the wontons.
  3. Garnish with spring onion to finish.
  4. Serve immediately while hot.
